Just in case you thought I'd lose weight on the no dairy/wheat/alcohol diet ...

No fear. I figured out how to make ice cream out of coconut cream, coconut milk, and a couple of avocados.

Plus, although I can't eat the cake, there is apparently nothing but fake, non-nutritive yet non-allergenic (to me) crap in the chocolate frosting. Let the rest of the family eat cake. Just give me a spoon and the Duncan Heinz can. I'm good.

Not to burst your bubble, but coconut oil is used in weight loss due to how it's metabolized. So, you might end up losing some weight after all, if you stick with that.

The frosting, on the other hand, is another matter altogether...

Okay, now, isn't coconut milk something like 1,000 calories per serving, which is about a teaspoon?!? LOL!!

So sorry you have to restrict so much. Having to restrict like that does seem like it takes all the fun out of life.

Man, you must have been feeling miserable to have agreed to that diet. I'm glad you found an acceptable ice-cream substitute. :) Now I suppose someone just needs to figure out how we can get you liquored up.

Stephanie, are you noticing a consistent improvement from the elimination diet? I know that as I have been feeling sick, I reached the place where I would happily stop having offensive foods if I stopped feeling so sick! I used to think I would just suffer rather hand have no beer of coffee but after 2 weeks of neither, if it meant I felt good, I'l just not have them. I'm not sure yet that my issues are food intolerances so tomorrow I am having my first coffee in two weeks. I hope it goes down happily because I would prefer no restrictions. But if not, no coffee is better than nausea and cramping....

Oh, hey, for a whipped cream substitute, try letting a can of coconut cream settle in the pantry for a month or so - don't flip it over, and that way the thick stuff will settle. Get the rich cream out, chill it well, chill your bowl and beaters - and whip the hell out of it. You can add sugar and additional flavors in very small amounts, which is kinda fun. LB and I have been playing with whether or not cream of tartar would stabilize it enough to use as more of a topping than a creamy pour-on, but she said it's absolutely delicious on fresh berries and such.

That would also make a yummy base for the fruit pizza! And then, it's completely dairy-free!!
